A pasta craving does not go away until it is fed. And I have some mean pasta cravings. Last week when the pasta monster came to call, I was in a distinctly non-grocery-shopped state. So I improvised with the packaged ravioli I had in the fridge and some other scrounged ingredients and got a result worth blogging about. I even repeated the effort for dinner guests shortly after. Do you ever notice how often those words slip from your lips? Lately, I’ve been noticing that I ignore “shoulds” and “shouldn’ts” a lot. With work, culinary school, family and friends, I have a busy schedule and often I find myself letting go of the things I “should” be doing just to get a few blissful moments of peace with a glass of wine and my DVR.

Last Sunday I began Introduction to Baking &amp; Pastry. I walked in thinking I had it in the bag - I bake all the time at home. In actuality, I had to relearn how to measure. Cups and teaspoons do not exist here. I learned to use a baker's scale to measure in pounds and ounces. Once I got the hang of it, it was quite fun.

Some nights, at some meals in particular, I become very aware of how lucky I am to appreciate amazing food and to live in Providence, where amazing food is so plentiful.

Another class complete, another set of lessons learned. Nutrition &amp; Sensory Analysis was by far my favorite class so far. And I swear to you, that is not because our instructing chef was… well, let’s call a spade a spade. He was a full on, 5 alarm hottie. I’ve never seen so many women in chef’s caps drooling on stainless steel tables before.

At tomorrow's class - providing it doesn't get snowed out - I have to turn in the first paper I've written in about a decade. Last night I had dinner guests, and I was looking for something easy, yet special to make for dessert. I got a great idea from Real Simple that I modified a little bit to take advantage of a great local treat.

First, I set up a double boiler with a pan of shallow water and a bowl to melt 8 ounces of Ghiradelli semi sweet chocolate.

So I tried my luck at hand-made ravioli - pumpkin ravioli - for the very first time. There was much hype. I talked about it at work, I bragged to my friends, and oh, the humanity, I twitted the hell out of it.

On Wednesday night, I got together with a couple of pals to carve pumpkins. I arrived armed with sharp knives, some Vosges bacon chocolate and a yummy mixture of sugar and spice to make those pumpkin seeds nice.





As the ladies carved, I put myself in charge of pulling the seeds out of the pumpkin guts. Last spring, I visited Tini on Washington Street with my buddy Melina. As she can tell you,

Last weekend I escaped the city with my pal Stacey in favor of Center Ossipee, New Hampshire for a little R and R. We borrowed a coworker's house, which turned out to be a rounded treehouse, high above the other homes, overlooking a lake.
